Ingredients for 4 people
• 8 slices of stale Tuscan bread
• 2-3 ripe tomatoes
• 1 large red onion
• Fresh basil
• Fruity Extra Virgin Olive Oil
• White Wine Vinegar
Chop the stale bread with your hands and gather it in a large bowl. Add water, just enough to wet it. Cut the onion into slices and transfer it to a bowl with cold water.
Cut the tomato into cubes. Squeeze the bread very well with your hands and transfer it to a bowl. With your hands, reduce it into fine crumbs.
Add the onion and the tomatoes. Add the basil, chopped with your hands. Season the panzanella salad with Extra Virgin Olive Oil, White Wine Vinegar and salt. Stir and let rest at least an hour before serving.
